“I don’t have time to cook breakfast.”
It’s the biggest excuse I hear from people skipping the most important meal of the day. Truth be told what it actually means is that “I have no idea what to make”, ” I haven’t really thought about it” or ” I just don’t make it a priority”.
But here’s the thing. If you want to feel full of life during the day, your meals need to be the same. Particularly the one that you begin with. Breakfast doesn’t have to be a boring, tasteless experience! In actual fact, you can make a real, nourishing meal within the same time frame it takes to pour a dead, lifeless cereal from a box. And in less time than it took me to write this post. (And that was pretty FAST for a change).
So decide how you want to feel for the rest of the day, and prepare your breakfast accordingly
What’s your favourite breakfast recipe?
INGREDIENTS
1-2 medium Sweet Potato (approx)
1/2 medium Zucchini (approx)
Egg
Ground Cumin
Cinnamon
Pinch of Nutmeg
Pinch Celtic Sea Salt
Butter or Coconut Oil for cooking
- Beat egg lightly in a bowl, and stir in grated vegetables and spices.
- Melt butter or coconut oil in pan and add spoonfuls of mixture, flattening with fork.
- Cook until golden on both sides and serve with fresh salad, avocado and tomatoes.
- Would taste awesome with a small serve of bacon and drizzled with Maple Syrup!
- Great for after school snacks
